I admittedly grow Tuscan kale primarily for its majestic beauty in the garden. Sure, it’s a delicious, tender, and versatile ingredient in many a meal but honestly sometimes it can be hard for me to harvest because it’s such show stopper. I have actually had a few folks who walk by my garden say “Are you ever going to pick that kale?” I do grow a lot of it. I do eat a lot of it. And I do share a lot of it with friends and neighbors. But mostly I admire it. In my opinion you can never grow enough. It’s the crop that keeps on giving. It grows right through fall, gets sweeter with the first frost and produces well into winter. It’s bluish-grey, crinkly leaves add depth and texture to the perennial border as well as in pots and planters. No garden should exist without its edible, statuesque beauty. I think I have begun the start of a garden manifesto.
